Grape Varieties:100% Macabeo, stainless and barrel fermented
Elaboration and aging:Cava made exclusively with the Macabeo variety, which ferments in stainless steel and in barrels. Then it is aged on its lees for 6 months in French oak barrels.
Subsequently, the "coupage" of 3 different Macabeo wines is carried out, for its second fermentation in the bottle for a minimum of 48 months.
All this process of elaboration of tradition and at the same time modernity brings contrast and forcefulness to this singular cava.
Tasting note of the winery:• View: Pale straw yellow with greenish reflections. Fine and abundant bubble, with good tear formation.
• Nose: Intense with fruity notes of green apple, together with fine balsamic, toasted and spicy touches that its aging in the barrel gives it.
• Mouth: In the mouth it appears dry and glyceric, with dense and creamy foam, highlighting the freshness of the fruit and the balsamic notes against a background of toasted and vanilla.
Tips and pairings: As an aperitif and at any time. It goes perfectly with Iberian ham, seafood, salted fish, risottos, poultry, smoked meats, foie gras, white and red meats and semi-cured cheeses.
Serve between 6 and 7º C.
