Elaboration and aging:Made with the classic copage of Penedes, from vineyards of Penedès over 60 years old. The maximum expression of indigenous varieties in its territory.
Second fermentation in the bottle, with a cork stopper. with a minimum aging of 5 years (60 months).
Tasting note of the winery:• View: Straw yellow with golden reflections. Fine and persistent bubbles, slow in its evolution.
• Nose: Clean, frank. Sweet on the nose with creamy notes, ripe fruit, vanilla and soft toasted nuances with a balsamic and smoky background of good complexity.
• Mouth: Fine and elegant in the attack on the palate, with carbonic excellently combined. Pleasant in its evolution, where the silkiness of the foam on a background of vanilla, ripe fruit, toasted and truffle. Very long and complex aftertaste, where the aromas of nose and mouth, highlighting the vanilla on a butter and toasted background, the fruit of its long aging.
Tips and pairings: Due to its structure and aging, it is ideal to accompany any type of food: caviar, smoked fish, gravy fish, meats, foie gras and cured cheeses.
Serve between 7 and 8o C.
Limited production, with numbered bottles.
The disgorging date: Ensures that the cava is always in optimal conditions on the market.
